big mama's & fried chicken...

so, for a long time mady & i have wished that we had a 'big mama'.  you know, a big ole southern gramma who cooks yummy fried chicken, homemade mac n' cheese and sweet potata pie.  alas we do not and probably will never have this magical lady so i have to settle for this...

my favorite cookbook of all time.  i love to just read it.  my most favorite fried chicken recipe is in here so i'll share it. 

Southern Fried Chicken
4 lbs. cut-up chicken pieces, your choice (with skin on)
3 cups buttermilk
1 1/2 cups self-rising flour
1 1/2 tsp. salt
1 1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1 tsp. garlic powder
1 1/2 tsp. paprika
2 eggs

rinse the chicken pieces and soak in 2 cups of buttermilk in the fridge for at least 2 hrs.  preferably overnight.  stir together the flour and seasonings and place on a plate.  beat the egg together with the remaining buttermilk.  heat oil about 1" deep in a skillet.  remove the chicken from the buttermilk and dredge in the flour.  dip in the egg mixture, then dredge again in the flour.  fry until cooked through, about 15 to 20 minutes.  drain on clean brown paper bags and season with salt.
note: i've changed up measurements a little on things so if you happen to buy this book i have a little more of this and that in there.:D

so if you are like me and love to dream of being a southern lady every once in awhile then try this out...serve it with some mashed potata's and milk gravy and maybe a mess a greens.  enjoy!
