big mama's & fried chicken...

so, for a long time mady & i have wished that we had a 'big mama'.  you know, a big ole southern gramma who cooks yummy fried chicken, homemade mac n' cheese and sweet potata pie.  alas we do not and probably will never have this magical lady so i have to settle for this...

my favorite cookbook of all time.  i love to just read it.  my most favorite fried chicken recipe is in here so i'll share it. 

Southern Fried Chicken
4 lbs. cut-up chicken pieces, your choice (with skin on)
3 cups buttermilk
1 1/2 cups self-rising flour
1 1/2 tsp. salt
1 1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1 tsp. garlic powder
1 1/2 tsp. paprika
2 eggs

rinse the chicken pieces and soak in 2 cups of buttermilk in the fridge for at least 2 hrs.  preferably overnight.  stir together the flour and seasonings and place on a plate.  beat the egg together with the remaining buttermilk.  heat oil about 1" deep in a skillet.  remove the chicken from the buttermilk and dredge in the flour.  dip in the egg mixture, then dredge again in the flour.  fry until cooked through, about 15 to 20 minutes.  drain on clean brown paper bags and season with salt.
note: i've changed up measurements a little on things so if you happen to buy this book i have a little more of this and that in there.:D

so if you are like me and love to dream of being a southern lady every once in awhile then try this out...serve it with some mashed potata's and milk gravy and maybe a mess a greens.  enjoy!

we have this most amazing  princess that lives in our ward.  she is the oldest of three girls who all have a mystery disease that makes them very special little spirits of our heavenly father.  i have had the privilege over the years of being her  teacher and she is one of those girls who always teaches you more than you will ever teach her.  she wrote the poem up above and i just wanted to share it on this beautiful sunday morning.

junktique planter...

now i know most of you know this one but i'll share it anyways.  just take an old chair, i wish i had a before of this one...yuckiest poo yellow color you have ever seen.  you can find chairs for cheap at yard sales and thrift stores and the good thing about this project is it doesn't matter what they look like really.  i wish this one would have had nasty white paint or some other color and i would have just left it alone.  we got this out of a shed and it was in bad shape but big d put it all back together for me, yay big d!   then find you a pot.  i have another one made out of an old school chair that i would show you but i don't have any pictures of it with flowers.  in that one i just used a plastic pot from walmart...in the one i'm showing you i used a big ole enamelware pot that i had.  so once you have your chair painted  and put back together, if it needs fixing, then you saw a hole in it.  i know some of you do not have a saw...find a neighbor or dad or friend that would be willing to do that for you.  someone you know has to have a saw if they have testosterone!  so anyhoo...plant that pot up with some pretty flowers and this is what you'll end up with.:D

fyi...these gorgeous plants are coleus.  there are many different shades and sizes and because my porch faces north i don't get a lot of sun and they love shade.  perfection.  sorry the picture isn't great but i need a new camera, hint hint.;D

best views in the world...

i was out in the back 40 today helping dave plant some trees...mostly just sitting on the tractor and looking around at all the beauty around me.;D  i am so lucky to live where i live!!  i literally have a 360 degree ring of amazing mountains around me and it snowed this morning so they all have a little new snow...gorgeous!!  i had to share but i wish you could stand out there with me and listen to the animals and the birds and see the new green grass coming up and feel the cool spring air.



but really this is the most gorgeous view ever...how sweet is that girl hangin out in the back of the truck?

momma's chicken pie...


i'm makin one of my family's faves tonight and thought i would share the love because, believe you me, this pie = love...

my mom actually makes this with turkey but i never have that so i use chicken instead.
cook 3 chicken breasts with a stalk of celery cut in half , a half an onion quartered, and about 1 Tbsp of salt.

old fashioned chicken pie


2 c cubed turkey or chicken
1 Tbsp flour 1 c chopped onion
1 c sliced carrots 1/4 c sliced celery
1 can or 2 c green beans 1/2 tsp thyme leaves
1/8 tsp pepper 1/4 c butter
1 can golden mushroom soup  pastry for 2 crust pie

toss turkey/chicken with flour.  in saucepan cook carrots, onions, and celery with thyme and pepper in butter until tender.   stir in soup, turkey mix and green beans.  pour into pie shell, cover with top crust and brush with milk.  bake at 350 for 45 minutes.  i use two cans of gravy and you just pour some over each piece of pie.  my mom also makes little individual pies with this recipe but she makes a circle out of crust and then spoons some on half of the circle.  then you fold it over and seal around the edges.  those are awesome because they are really easy to freeze.

~hope you get to try this recipe...i'm serious...it is YUMMY!!  forgive the crust on this pie but my pie crusts always come out looking a little ummm, rustic.  the first thing i saw that made me a farm chicks stalker was this article...those pies are perfection.  someday, i too, will make crusts as beautiful as those.:D
